Ingredients
1 cup Extra-virgin olive oil or mustard oil
1 cup Boiling water
Directions
Bring water to a rolling boil in a kettle or pot.
Pour the olive oil or mustard oil into a heat-safe glass bowl or measuring cup.
Place the oil container in a warm water bath. Carefully pour the boiling water into a separate larger bowl and nest the oil container inside it, ensuring the water level reaches about halfway up the sides of the oil container. Do not allow water to splash into the oil.
Allow the oil to warm gently in the hot water bath for 15–20 minutes. The indirect heat will slowly warm the oil and help reduce its bitter compounds without damaging its delicate flavor profile.
Remove the oil container from the water bath and let it cool to room temperature, approximately 10 minutes.
Transfer the debittered oil to a clean, dry glass bottle or storage container. The oil is now ready to use as a condiment for salads, soups, bread, or other dishes where you desire a milder oil flavor.

This is a condiment base, not a dish, and at two servings the yield barely justifies kitchen time.
