This citrus drink is naturally sweetened and infused with the subtle floral notes of lemongrass, making it perfect for warm days. The drink is served chilled and can be adjusted to your preferred sweetness level.

Ingredients

3 cup water

⅓ cup sugar

20 sprig fresh lemongrass sprigs, bruised

6 piece fresh lemons, halved

1 pinch salt

1½ cup water for diluting

Directions

  1. In a large saucepan, combine 3 cups of water and the sugar. Bring to a boil over medium-high heat, stirring occasionally until the sugar dissolves completely.

  2. Add the bruised lemongrass sprigs to the boiling water. Reduce heat to medium and simmer for 8-10 minutes to allow the lemongrass flavor to infuse into the syrup.

  3. Meanwhile, squeeze the juice from all 6 lemon halves into a large pitcher, removing any seeds as you juice them.

  4. Remove the saucepan from heat and stir in a pinch of salt. Allow the mixture to cool for 5 minutes.

  5. Strain the lemongrass syrup through a fine-mesh sieve into the pitcher containing the lemon juice, discarding the lemongrass sprigs.

  6. Add 1 to 2 cups of water to the pitcher, depending on your desired strength and sweetness, and stir well to combine.

  7. Chill in the refrigerator for at least 1 hour before serving. Serve over ice with a lemon wheel or fresh lemongrass sprig as garnish, if desired.
