Ingredients

1 can (15 ounce) great northern beans, low-sodium, rinsed and drained

1/4 cup water

1/2 cup plain low-fat yogurt

1/2 teaspoon garlic powder

1/8 teaspoon cayenne pepper

1/4 teaspoon black pepper

1 tablespoon fresh chopped chives

1 tablespoon fresh chopped parsley

1/4 teaspoon dried tarragon

1/4 teaspoon salt

1 tablespoon fresh lemon juice

Directions

  1. Wash your hands thoroughly with soap and clean running water.

  2. Rinse and drain the canned great northern beans, discarding the liquid.

  3. Add the drained beans, garlic powder, and water to a blender. Blend on medium speed for about 2 minutes, stopping occasionally to scrape down the sides, until the mixture reaches a smooth, creamy consistency. Adjust water as needed to achieve your preferred texture.

  4. Transfer the blended bean mixture to a medium bowl using a rubber spatula, scraping all the creamy base from the blender.

  5. Fold in the plain low-fat yogurt, cayenne pepper, black pepper, fresh chives, fresh parsley, dried tarragon, salt, and lemon juice. Stir gently until all ingredients are evenly combined.

  6. Transfer the finished dip to a serving bowl and serve immediately with fresh vegetables, whole grain crackers, or other dippers of your choice.
