Ingredients
2 boneless, skinless chicken breasts
Salt and pepper to taste
¼ cup soy sauce
⅓ cup rice vinegar
2 tablespoons fresh ginger, minced
3 cloves garlic, minced
2 tablespoons honey
1 tablespoon sesame oil
¾ cup olive oil
¼ teaspoon black pepper
10 ounces fresh spring mix
¾ cup snow peas, cut into bite-sized pieces
¾ cup red bell pepper, julienned
½ cup shredded carrots
¼ cup sliced green onions
15 ounces canned mandarin oranges, drained
Sesame seeds for garnish
Directions
Preheat your grill to medium-high heat.
Season both sides of the chicken breasts generously with salt and pepper.
Place the chicken breasts on the preheated grill and cook for 5-6 minutes per side, until the internal temperature reaches 165°F with no pink remaining inside. Remove from grill and let cool slightly, then slice into strips.
While the chicken is cooking, prepare the dressing by combining the soy sauce, rice vinegar, minced ginger, minced garlic, honey, sesame oil, olive oil, and black pepper in a small bowl. Whisk thoroughly until the ingredients are well emulsified and there is no visible separation of oil and vinegar.
In a large serving bowl, arrange the spring mix as the base. Top with the snow peas, red bell pepper, shredded carrots, sliced green onions, drained mandarin oranges, and sliced grilled chicken breast.
Drizzle the sesame ginger dressing over the salad and toss gently to coat all ingredients evenly. Sprinkle sesame seeds on top as garnish and serve immediately.
