4 tablespoons unsalted butter

1 medium onion, finely diced

1 medium green bell pepper, finely diced

3 celery ribs, finely diced

1 small jalapeño pepper, finely diced

3 garlic cloves, minced

1¼ pounds boneless, skinless chicken thighs, cut into bite-size pieces

2 tablespoons Cajun Creole seasoning blend

2 teaspoons kosher salt

8 ounces tomato sauce

15½ ounces small red beans, drained and rinsed

32 ounces low-sodium chicken broth

½ cup white rice

1 bay leaf

4 teaspoons worcestershire sauce

1 tablespoon hot sauce

Directions

  1. Melt butter in a large pot over medium heat. Add diced onion, green bell pepper, celery, and jalapeño pepper. Sauté the vegetables for 5-6 minutes, stirring occasionally, until they begin to soften. Add minced garlic and cook for another minute until fragrant.

  2. Add the chicken pieces to the pot and sprinkle with Cajun Creole seasoning blend and kosher salt. Stir well to coat the chicken evenly with the seasonings. Cook for 3-4 minutes, stirring frequently, until the chicken begins to brown on the edges.

  3. Pour in the tomato sauce, stirring to combine with the chicken and vegetables. Add the drained and rinsed red beans, chicken broth, white rice, and bay leaf. Stir in the worcestershire sauce and hot sauce.

  4. Bring the soup to a boil, then reduce heat to medium-low and simmer uncovered for 20-25 minutes, stirring occasionally. The chicken should reach an internal temperature of 165°F, the rice should be tender, and the flavors should meld together.

  5. Remove the bay leaf from the pot. Taste the soup and adjust seasoning with additional salt, black pepper, and hot sauce if desired. Ladle into bowls and serve hot.
