Ingredients

1 1/4 cups roasted almonds, macadamia nuts, walnuts, or pecans, coarsely chopped

4 ounces dark chocolate, finely chopped

1/4 cup unsalted butter

4 ounces shortbread or digestive biscuits, finely crushed into crumbs

2 ounces shortbread or digestive biscuits, coarsely chopped

Directions

  1. Combine the dark chocolate and unsalted butter in a heatproof bowl. Set the bowl over a pot of gently simmering water (double boiler method), ensuring the bowl does not touch the water. Stir frequently until the chocolate and butter are completely melted and smooth. Remove from heat and let cool slightly.

  2. Fold the coarsely chopped nuts into the melted chocolate mixture until evenly combined.

  3. Add the finely crushed shortbread crumbs to the chocolate and nut mixture. Stir until all ingredients are fully incorporated and the mixture is well combined.

  4. Gently fold in the coarsely chopped shortbread pieces, being careful to maintain some texture rather than crushing them further.

  5. Transfer the mixture to a small parchment-lined baking dish or loaf pan. Press down gently and evenly to form a compact layer. Refrigerate for at least 2 hours or until firm.

  6. Remove from the refrigerator and cut into 8 equal pieces using a sharp knife, wiping the blade between cuts for clean edges. Serve at room temperature or chilled.
