Ingredients
4 cups whole wheat flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 cups buttermilk
3 tablespoons unsalted butter, melted
Directions
Preheat your oven to 375°F (190°C). Lightly grease a 9-inch round cake pan or baking sheet.
In a large mixing bowl, whisk together the whole wheat flour, sugar, baking powder, baking soda, and salt until evenly combined.
Create a well in the center of the dry ingredients and pour in the buttermilk and melted butter.
Using a wooden spoon or sturdy spatula, stir the mixture until just combined into a shaggy dough. Do not overmix—the dough should be slightly rough and lumpy rather than smooth.
Turn the dough out onto a lightly floured surface and gently shape it into a round loaf about 1 1/2 inches tall. Transfer to the prepared pan.
Using a sharp knife, score the top of the loaf with a shallow cross, which is traditional for Irish brown bread and helps the bread bake evenly.
Bake for 35 to 40 minutes, until the top is golden brown and a skewer inserted into the center comes out clean or with only a few moist crumbs.
Allow the bread to cool in the pan for 5 to 10 minutes, then turn out onto a wire rack to cool further before slicing and serving.
