½ cup brown sugar
1 tablespoon miniature chocolate chips
1 cup all-purpose flour
1 tablespoon rainbow sprinkles
⅛ teaspoon salt
1 tablespoon unsalted butter, melted
¼ cup unsweetened applesauce
½ teaspoon vanilla extract
Directions
In a small mixing bowl, whisk together the melted butter, applesauce, vanilla extract, and salt until well combined.
Add the brown sugar to the wet mixture and stir vigorously, pressing out any lumps against the side of the bowl until the sugar is fully incorporated and the mixture is smooth.
Gently fold in the flour, stirring only until no dry streaks remain. Do not overmix. Then fold in the chocolate chips and rainbow sprinkles until evenly distributed.
Cover the bowl with plastic wrap and refrigerate the dough for 30 to 60 minutes until it becomes firmer and easier to handle.
Line a large plate or baking sheet with wax paper. Remove the chilled dough from the refrigerator and use a small spoon or your hands to roll the dough into 32 equal-sized balls.
Arrange the dough balls on the wax paper-lined plate and return to the refrigerator for 5 to 10 minutes until they become slightly firmer.
Transfer the finished dough bites to an airtight container and store in the refrigerator until ready to serve. They will keep for up to one week.
