1 tablespoon butter

1 tablespoon all-purpose flour

Salt to taste

Black pepper to taste

1 cup fat-free skim milk

Directions

  1. Wash your hands thoroughly with soap and water.

  2. Place a small pot on low heat and add the butter, allowing it to melt completely without browning.

  3. Once the butter is melted, sprinkle the flour over the top and stir continuously for about 1 minute to create a smooth paste (roux).

  4. Season the roux with salt and pepper to your preference.

  5. Gradually pour in the milk while stirring constantly to prevent lumps from forming.

  6. Increase the heat to medium and continue stirring constantly as the sauce heats through until it reaches a gentle boil.

  7. Once the mixture reaches a boil, keep stirring until it thickens to a smooth, pourable consistency resembling thin cream. This typically takes 2-3 minutes.

  8. Remove from heat and serve immediately.
