1 cup Turkish hot pepper paste
1/2 cup extra virgin olive oil
1/2 cup chopped fresh parsley
4 medium cloves garlic, minced
1 tablespoon pomegranate molasses
1 tablespoon kosher salt
2 teaspoons isot pepper (optional)
1 teaspoon ground cumin
1 teaspoon paprika
3 pounds chicken wings, cut at joints, wingtips discarded
Directions
In a large bowl, combine the Turkish hot pepper paste, extra virgin olive oil, minced garlic, pomegranate molasses, kosher salt, isot pepper (if using), ground cumin, and paprika. Stir until well blended to create a uniform marinade.
Add the chicken wing pieces to the bowl and fold the marinade over the wings until all pieces are evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
Remove the marinated chicken wings from the refrigerator 15 minutes before grilling to bring them closer to room temperature.
Preheat your grill to medium-high heat (approximately 400°F). Oil the grill grates lightly to prevent sticking.
Place the chicken wings on the hot grill, reserving the remaining marinade. Grill the wings for 10-12 minutes on the first side, then flip and grill for another 8-10 minutes on the second side, turning as needed to ensure even charring.
Continue grilling until the chicken wings reach an internal temperature of 165°F, which will typically take 20-25 minutes total depending on wing size and grill temperature.
About 2 minutes before the wings finish cooking, brush them lightly with the reserved marinade and let it caramelize on the grill.
Transfer the cooked wings to a serving platter and garnish generously with the fresh chopped parsley. Let rest for 2 minutes before serving.
