A quick and flavorful stir-fried noodle dish combining crispy bacon, tender bay shrimp, and soft ramen noodles tossed in a savory sauce of sesame oil, fish sauce, and chili garlic sauce, finished with fresh herbs for a bright finish.

Ingredients

3 slices bacon, cut into 1/2-inch pieces

2 packages instant ramen noodles (seasoning packets discarded)

1/2 medium onion, sliced

1/4 pound bay shrimp

1 large egg

1 tablespoon sesame seed oil

2 teaspoons fish sauce

1 tablespoon chili garlic sauce

1/4 cup fresh herbs (Thai basil, mint, and/or cilantro)

Directions

  1. Bring a pot of water to a boil. Add the ramen noodles and cook according to the package instructions, about 3 minutes. Drain and rinse the noodles under cold water to prevent sticking, then set aside.

  2. In a small bowl, combine the sesame seed oil, fish sauce, and chili garlic sauce. Mix well and set aside.

  3. Heat a large skillet over medium-high heat. Add the bacon pieces and cook until they are nearly golden brown and crispy, about 3-5 minutes.

  4. Add the sliced onion to the bacon and cook for about 1 minute, stirring occasionally. Add the shrimp and cook until they turn pink and are cooked through, about 1 minute more.

  5. Push the bacon, onion, and shrimp to the side of the skillet. Crack the egg into an empty area of the skillet and scramble it, stirring until fully cooked through, about 1 minute.

  6. Add the drained ramen noodles to the skillet with the bacon, shrimp, onion, and egg. Drizzle the sauce mixture over the noodles and toss everything together over the heat until the noodles are well coated and heated through, about 1-2 minutes.

  7. Remove the skillet from heat. Stir in the fresh herbs and serve immediately while hot.
