Ingredients
2 cups milk
2 large eggs
3 cups all-purpose flour
1 tablespoon garlic powder
Salt to taste
Freshly ground black pepper to taste
2 cup Canola oil for frying
7 lb Two 3½ pound chickens, cut into 16 pieces total
Directions
Cut both chickens into 16 pieces total (approximately 8 pieces per bird), including breasts, thighs, drumsticks, and wings.
In a shallow bowl, whisk together the milk and eggs until well combined to create the wet coating.
In another shallow bowl, combine the flour, garlic powder, salt, and black pepper. Mix until evenly distributed.
Dip each chicken piece into the milk-egg mixture, coating all sides thoroughly.
Transfer the coated chicken piece to the seasoned flour mixture and coat evenly on all sides, pressing gently so the flour adheres. Place on a clean plate and repeat with remaining chicken pieces.
Heat the canola oil in a large, heavy-bottomed skillet or Dutch oven to 350°F. If you don't have a thermometer, test with a small piece of flour—it should sizzle immediately.
Carefully place chicken pieces into the hot oil, being careful not to crowd the pan. Work in batches if necessary, frying no more than half the batch at a time.
Fry the chicken for 12–15 minutes, turning occasionally, until the internal temperature reaches 165°F and the coating is deep golden brown.
Transfer the cooked chicken to a paper towel-lined plate to drain excess oil. Serve hot while the coating is still crispy.
Comments
Every ingredient is a standard pantry or dairy staple found at any Charlotte grocery chain—milk, eggs, flour, garlic powder, salt, pepper, canola oil, and chicken are reliably available and cheap across Harris Teeter, Food Lion, Walmart, and ALDI. At roughly $1.50 to $2.00 per serving depending on the cut of chicken, this is a genuinely affordable family dinner. The 50-minute claim is honest for a weeknight: it accounts for dredging, heating oil, and frying, with minimal active time once the chicken hits the pan. The only caveat is that fried chicken does not reheat well—it's best eaten fresh the same night, so plan accordingly if you need leftovers.
