Ingredients
8 ounces Feta cheese, broken into 2-inch chunks
2 sprigs Rosemary sprigs, halved
6 sprigs Fresh thyme sprigs
2 Jalapeños, split lengthwise
3 2-inch strips Lemon peel strips
Freshly ground black pepper
1 cup Extra virgin olive oil
Directions
Place the feta cheese chunks in a clean glass jar or container with a tight-fitting lid.
Arrange the halved rosemary sprigs, thyme sprigs, split jalapeños, and lemon peel strips around and between the feta chunks.
Season with freshly ground black pepper to taste.
Pour the extra virgin olive oil over the cheese and herbs until all ingredients are fully submerged and the jar is nearly full.
Cover the jar and let the marinated feta rest at room temperature for at least 1 hour before serving, or refrigerate for up to 2 weeks for deeper flavor development.
Serve at room temperature or chilled, spooning some of the infused oil over the cheese and transferring a selection of jalapeños and herbs to the serving dish.
