Ingredients

1/3 cup water

1 cup granulated sugar

1/4 teaspoon cream of tartar

1/4 teaspoon peppermint extract

Few drops of green food coloring or other desired color

Directions

  1. Combine water, sugar, and cream of tartar in a heavy-bottomed saucepan. Stir over medium heat until the sugar dissolves completely, then stop stirring.

  2. Let the mixture come to a boil without disturbing it. If sugar crystals form on the sides of the pan, brush them down gently with a wet pastry brush.

  3. Continue cooking until the mixture reaches 300°F (hard-crack stage) on a candy thermometer, about 8–10 minutes. Do not stir during this time.

  4. Remove from heat and let the bubbles subside for a moment. Quickly add the peppermint extract and food coloring, stirring gently to combine.

  5. Immediately pour the hot candy onto a buttered or parchment-lined baking sheet, spreading it thin. Be very careful—the mixture is extremely hot.

  6. Allow the candy to cool completely at room temperature until hard, about 15 minutes. Break into pieces and store in an airtight container.
