1 tablespoon olive oil
¾ cup chopped onion
3 large carrots, peeled and sliced thinly
3 celery stalks, sliced thinly
49 ounces chicken broth
1 tablespoon cornstarch
¼ cup cold water
1 lb. package egg noodles
2 tablespoons butter
2 teaspoons fresh parsley, chopped
2 teaspoons fresh thyme
2 cups cooked, shredded chicken
3–4 green onions, thinly sliced

Directions
Heat the olive oil in a large soup pot over medium-high heat until shimmering.
Add the chopped onion, sliced carrots, and sliced celery to the hot pot. Sauté the vegetables for 3–5 minutes, stirring occasionally, until they are tender-crisp.
Pour the chicken broth into the pot and bring to a simmer. Let the broth simmer for about 20 minutes to allow the flavors to develop and the vegetables to become fully tender.
In a small bowl, whisk together the cornstarch and cold water until smooth and fully dissolved. Slowly pour this cornstarch mixture into the simmering broth while stirring constantly to prevent lumping. The broth will thicken slightly.
Add the egg noodles to the pot and bring the soup to a rolling boil. Cook the noodles, checking them every few minutes. Remove from heat when the noodles are mostly cooked but still slightly firm to the bite; they will continue to soften from residual heat. Do not overcook, or they will become mushy and break apart.
Stir in the butter, parsley, and thyme, stirring until the butter is fully melted and the herbs are well distributed throughout the soup.
Add the cooked, shredded chicken to the pot and stir gently to combine. Season the soup with salt and pepper to your taste.
Let the soup rest for a minute or two; it will thicken slightly as it cools, creating a rich, flavorful broth that coats all the ingredients without being runny. Just before serving, stir in the sliced green onions for a fresh, bright finish.
