Ingredients

3 handfuls fresh jujubes (about 15–20 pieces), rinsed

1 large piece fresh ginger (about 2–3 inches), cut into chunks

2 cinnamon sticks

2 cups water

Directions

  1. Pour 2 cups of water into a small pot or kettle and bring to a boil over medium-high heat.

  2. While the water heats, prepare the ingredients: rinse the jujubes under cool water, remove any debris, and cut the fresh ginger into rough chunks.

  3. Once the water reaches a rolling boil, add the jujubes, ginger chunks, and cinnamon sticks to the pot.

  4. Reduce heat to medium and simmer uncovered for 12–15 minutes, allowing the flavors to infuse fully. The tea should take on a warm amber color and develop a sweet, spiced aroma.

  5. Pour the tea into your serving cup, using a fine strainer or slotted spoon to catch the solids. Add whole jujubes to the cup if desired for a more traditional presentation.

  6. Serve hot and enjoy immediately.
