2 lb Boneless, skinless chicken thighs
Chile dry rub
2 tbsp Olive oil
Directions
Pat the chicken thighs dry with paper towels to remove excess moisture. This helps achieve better browning and crispier exterior.
Generously coat all sides of the chicken thighs with the chile dry rub, working the seasoning into the meat evenly.
Heat the olive oil in a large skillet over medium-high heat until it shimmers.
Carefully place the seasoned chicken thighs in the hot oil, skin side down if skin is still present, or presentation side down. Sear without moving for 8-10 minutes until deep golden brown.
Flip the chicken thighs and continue cooking for another 8-12 minutes, until the internal temperature reaches 165°F when measured with an instant-read thermometer in the thickest part of the thigh.
Transfer the cooked chicken to a clean cutting board and let rest for 5 minutes, then shred or chop into bite-sized pieces.
Serve the chicken in warm tortillas with desired toppings such as salsa, lime, cilantro, or lettuce.
