Ingredients
1 small onion, cut into chunks
1 clove garlic
400g tin chickpeas, drained
½ tsp ground cumin
½ tsp ground coriander
¼ tsp chilli powder
Black pepper to taste
Salt to taste
4 tbsp fresh coriander, chopped
1 tbsp plain flour
2 tbsp oil
Directions
Place the onion chunks and garlic clove in a food processor. Pulse for a few seconds until the mixture becomes a coarse paste.
Add the drained chickpeas, ground cumin, ground coriander, and chilli powder to the processor. Pulse until the mixture reaches a fairly smooth consistency with small visible bits remaining.
Transfer the mixture to a bowl and stir in the fresh chopped coriander by hand. Season generously with salt and black pepper to taste, mixing well until all ingredients are evenly distributed.
Using clean, damp hands, form the mixture into 6 equal balls. Press each ball gently into a flat, round patty shape, about ½ inch thick.
Scatter the flour on a small plate. Gently coat each patty with flour on both flat sides, dusting off any excess.
Heat the oil in a frying pan over medium heat. Once hot, carefully place the patties in the pan. Cook for approximately 4 minutes on the first side until golden brown and crispy. Flip and cook the other side for another 4 minutes until similarly golden.
Remove the patties from the pan and serve immediately. Optionally, place inside warm pita bread with fresh lettuce and your choice of cooling sauce such as salsa or tzatziki.
Comments
This falafel hits Charlotte-friendly ingredient marks: canned chickpeas are everywhere, and spices (cumin, coriander, chilli powder) stock at any major grocer including Food Lion, Walmart, and ALDI at good prices. The 20-minute claim is optimistic if it includes shaping and frying; budget closer to 25 to 30 minutes for that sequence plus any sauce-making. The real cost driver is fresh coriander, which can run $1.50 to $2 per bunch for a small garnish, and you need a Harris Teeter or Publix produce section reliably stocked; a pinch at a regular grocer means a deliberate stop. Serves two as a main only if flanked with rice, greens, or pita bread (shop separately). It does not keep well—reheated falafel dries out or turns soggy, so plan this as a same-night dish.
