Thai-Style Prawns

Ingredients
600g jumbo king prawns, peeled and deveined
4 lemongrass stems, bruised
1 large red chilli, seeded and finely chopped
1 tablespoon olive oil
2 teaspoons Thai fish sauce
2 fat garlic cloves, crushed
2 teaspoons grated fresh ginger
1 teaspoon ground cumin
Directions
In a bowl, combine the crushed garlic, grated ginger, ground cumin, chopped red chilli, olive oil, and fish sauce to form the marinade.
Add the peeled and deveined king prawns to the bowl and toss well to coat evenly with the marinade. Let stand for 5 minutes.
Thread the marinated prawns onto metal skewers. Preheat a barbecue or grill to medium-high heat.
Place the bruised lemongrass stems in the centre of the grill grates. Position the prawn skewers on top of the lemongrass.
Grill the prawns for 2–3 minutes, turning the skewers once halfway through, until the prawns are opaque throughout and firm to the touch. Internal temperature should reach 145°F.
Remove the skewers from the grill and carefully discard the lemongrass. Serve the prawns hot.
