A Fig Sandwich From My Neighborhood

Ingredients
2 ounce blue cheese
1 ounce cream cheese
to taste kosher salt
to taste freshly cracked black pepper
4 slice whole grain bread slices
4 teaspoon melted butter
1 tablespoon olive oil
4 ounce radicchio
fresh figs, sliced
Directions
In a small bowl, combine the blue cheese and cream cheese. Mash them together with a fork until well blended and creamy. Set the mixture aside.
Rinse the radicchio and slice it crosswise into thin ribbons. Set aside.
Heat the olive oil in a large cast iron or non-stick skillet over medium-high heat.
Add the radicchio ribbons to the hot skillet along with a pinch of kosher salt and black pepper. Stir frequently as the radicchio cooks, about 5 minutes, until completely wilted and tender.
Transfer the wilted radicchio to a small bowl and set aside. Wipe the skillet clean and dry with paper towels, then return it to the stove and reduce the heat to medium-low.
Brush one side of each bread slice evenly with melted butter, making sure to coat all the way to the edges. Lay the buttered bread slices butter-side down on a clean work surface.
Spread the cheese mixture on two of the bread slices. Layer sliced fresh figs on top of the cheese, then add a portion of the wilted radicchio on top of the figs. Season with additional salt and pepper if desired.
Place the remaining two bread slices on top of the fillings, butter-side out, to create two complete sandwiches.
Carefully place the sandwiches into the heated skillet. Cook for 3 to 4 minutes until the bottom is golden brown and crispy. Flip the sandwiches and cook the other side for 2 to 3 minutes until equally browned.
Transfer the warm sandwiches to a plate and serve immediately while the bread is crispy and the cheese is warm.
