5½ pounds Boneless pork shoulder, trimmed of excess fat

2 tablespoons Vegetable oil

2 tablespoons Kosher salt

3 tablespoons Unsweetened cocoa powder

3 tablespoons Packed light brown sugar

1 tablespoon Grated orange zest

1 teaspoon Freshly ground black pepper

¼ teaspoon Ground clove

3 Medium yellow onions, quartered

⅓ cup Freshly squeezed orange juice

¼ cup Red wine vinegar

Directions

  1. In a small bowl, whisk together the cocoa powder, brown sugar, orange zest, black pepper, and clove until fully combined to create a fragrant spice rub.

  2. Rub the pork shoulder all over with the vegetable oil, then season evenly with the kosher salt. Apply the cocoa spice rub generously over the entire surface of the pork, pressing gently to adhere.

  3. Place the quartered onions in the bottom of a large roasting pan or shallow dish. Set the seasoned pork on top of the onions, then pour the orange juice and red wine vinegar over and around the meat.

  9. Using a sharp knife, separate the crispy skin and fat layer from the meat in one piece if possible. Cut the crackling into bite-sized pieces. Slice the meat against the grain into serving portions.

  10. Arrange the sliced pork and crackling pieces on a serving platter. Spoon the pan juices and caramelized onions over the meat and serve immediately.
