One-Pot Turkey Sausage and Noodles

Ingredients
3 tablespoons olive oil
1 large yellow onion, thinly sliced
2 to 3 garlic cloves, chopped
4 banana peppers, sliced into rounds
2 cups diced fresh tomatoes
13-ounces turkey sausage, sliced into 1/4-inch rounds
3 sprigs fresh thyme leaves
Salt and fresh ground pepper, to taste
8 ounces egg noodles
1-1/2 cups vegetable broth
2 cups skim milk
1 cup shredded parmesan cheese
Fresh parsley, for garnish
Crushed red pepper, for garnish
Directions
Heat the olive oil in a large pot over medium-high heat until shimmering.
Add the sliced onion, garlic, banana peppers, diced tomatoes, sliced turkey sausage, and fresh thyme to the hot oil. Season generously with salt and ground pepper. Cook, stirring occasionally, for about 5 minutes until the vegetables begin to soften and the sausage starts to brown.
Stir in the egg noodles, vegetable broth, and skim milk. Bring the mixture to a boil over medium-high heat, stirring occasionally to prevent sticking.
Once boiling, reduce the heat to medium-low and cover the pot with a lid. Simmer for 12 minutes, stirring occasionally, until the noodles are tender and the liquid is mostly absorbed.
Remove the pot from heat. Stir in the shredded parmesan cheese until fully incorporated and melted.
Let the dish rest for 5 minutes, covered, to allow flavors to meld.
Divide among serving bowls and top with fresh parsley and crushed red pepper.
