Ingredients

2 quarts water

1 cup coarse salt

1 tablespoon pink curing salt

1/2 cup sugar

1 teaspoon crushed coriander seeds

1 teaspoon crushed mustard seeds

1 teaspoon crushed black peppercorns

1 crushed cinnamon stick

4 crushed dried bay leaves

8 whole cloves

Directions

  1. In a large pot, combine water, coarse salt, pink curing salt, and sugar. Stir over medium heat until the salts and sugar fully dissolve, about 5 minutes. Do not allow the mixture to boil.

  2. Remove the pot from heat and add the crushed coriander seeds, crushed mustard seeds, crushed black peppercorns, crushed cinnamon stick, crushed bay leaves, and whole cloves. Stir well to combine and allow the spices to steep in the hot brine for 10 minutes.

  3. Let the brine cool completely to room temperature, then refrigerate until chilled, about 2 hours.

  4. Use this chilled brining liquid to cure beef brisket or other cuts of beef according to your preferred recipe, or store in the refrigerator for future use.
