2 pounds Lean trimmed sirloin beef
1 teaspoon Salt
1 teaspoon Freshly ground black pepper
4 medium cloves Garlic cloves, minced
2 tablespoons Fresh rosemary, minced
2 teaspoons Dried oregano
Directions
Preheat your oven to 400 degrees Fahrenheit.
Lightly spray a shallow roasting pan with cooking spray to prevent sticking.
Pat the sirloin beef dry and place it in the prepared roasting pan. Season the entire surface generously with salt and freshly ground black pepper.
In a small bowl, combine the minced garlic, fresh rosemary, and dried oregano until well mixed.
Rub the herb mixture evenly over the top and sides of the beef, pressing gently with your hands to ensure the herbs adhere firmly to the meat.
Place the roasting pan in the preheated oven and roast for approximately 20 minutes, or until an instant-read thermometer inserted into the thickest part of the beef reads 145 degrees Fahrenheit for medium doneness.
Remove the roasted beef from the oven and transfer it to a cutting board. Let it rest for 15 minutes to allow the juices to redistribute throughout the meat.
Slice the beef crosswise into ¼-inch-thick slices and serve immediately.
