Ingredients
6 fresh asparagus spears, washed and trimmed
½ teaspoon olive oil
1 to 2 teaspoons Montreal Steak Spice
⅓ cup cooked whole wheat couscous
3 ounces grilled or barbecued chicken breast
1 large hard-boiled egg
3 slices fresh avocado
1 tablespoon low-sodium soy sauce
⅛ teaspoon sriracha sauce (or to taste)
Directions
Peel and slice the hard-boiled egg into your preferred size—slices, chunks, or diced pieces.
Heat the olive oil in a skillet over medium heat. Add the trimmed asparagus and sprinkle with Montreal Steak Spice, stirring occasionally for 4–5 minutes until the spears are tender and lightly browned. Transfer to a plate.
In a bowl, combine the cooked couscous, grilled chicken breast, sliced hard-boiled egg, seasoned asparagus, and avocado slices.
Drizzle the low-sodium soy sauce over the bowl and add a dash of sriracha sauce to taste. Toss gently to combine and serve immediately.
Comments
This is a solid weeknight bowl, but the ten-minute claim ignores the time to cook chicken breast and couscous simultaneously—plan on 25 minutes realistically. Asparagus, avocado, and eggs are reliably available across Charlotte chains, and the ingredients total around $4.50 per serving, driven by the chicken. The main caveat is that it does not keep well; the avocado oxidizes and the couscous hardens overnight, making this a same-night dish only. It's an excellent choice for a busy weekday dinner if you eat it fresh, and Montreal steak spice and sriracha are standard stock at any major grocer here.
