Authentic German Potatoes

Ingredients
4 medium potatoes
80 grams Wiener sausages
3 tablespoons mayonnaise
1½ tablespoons grain mustard
Salt to taste
Coarsely ground black pepper to taste
1 tablespoon olive oil
Directions
Peel the potatoes and slice them into thin, even slices. Soak the sliced potatoes in cold water for a few minutes to remove excess starch, then drain thoroughly in a strainer.
Cut the Wiener sausages diagonally into thin, uniform slices.
Place the sliced sausages in a large frying pan over low heat without any oil. Cook, stirring occasionally, until the sausages brown and render their fat, about 5-7 minutes. Transfer the browned sausages to a plate and set aside.
Add the olive oil to the same frying pan over low heat. Add the drained potato slices, season with salt and pepper to taste, and sauté gently, stirring occasionally, until the potatoes become translucent and tender, about 10-12 minutes.
Increase the heat to medium, return the cooked sausages to the pan with the potatoes, and continue sautéing for another 2-3 minutes, stirring to combine all ingredients evenly.
Remove the pan from the heat. Stir in the mayonnaise and grain mustard until everything is well coated and evenly distributed. Serve warm.
