Ingredients
1/2 cup brown sugar
2 sticks unsalted butter, softened
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
4 oz box instant chocolate pudding mix
10 oz bag peanut butter chips
1 1/2 cups mini marshmallows
Directions
Preheat oven to 350°F. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, approximately 2-3 minutes.
Add the eggs one at a time to the butter mixture, beating well after each addition. Stir in the vanilla extract until fully combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, stirring until just combined.
Add the instant chocolate pudding mix to the dough and stir until evenly distributed. Fold in the peanut butter chips and mini marshmallows until fully incorporated throughout the dough.
Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
Bake at 350°F for 10-12 minutes, until the edges are set but the centers still appear slightly underbaked. The cookies should look just barely done.
Remove from the oven and allow the cookies to cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
