Ingredients

1 small ripe pineapple

1 clove garlic

2 shallots

3 fresh red chillies

2 fresh bird's-eye chillies

2 tablespoons brown sugar

1 lime

sea salt to taste

black pepper to taste

Directions

  1. Remove the crown and base from the pineapple, then cut away the thick peel. Use a small knife or vegetable peeler to remove any remaining rough eyes and fibrous bits. Slice the pineapple into wedges, then cut out and discard the tough fibrous core from each wedge.

  2. Peel the garlic clove and shallots. Carefully deseed the red chillies and bird's-eye chillies, removing the white membrane and seeds. Add the garlic, shallots, and chillies to a food processor and pulse until the mixture reaches a fine, even texture.

  3. Add the prepared pineapple pieces to the food processor and pulse until finely chopped, while maintaining a slight texture rather than pureeing into a smooth paste.

  4. Sprinkle the brown sugar over the pineapple mixture and pulse briefly to combine all ingredients evenly. Cut the lime in half, squeeze the juice into the relish, and stir well to incorporate.

  5. Taste the sambal nenas and season with sea salt and black pepper to your preference. Transfer to a serving bowl and enjoy with grilled meats, rice, or as a dipping sauce.
