8 ounces fat-free cream cheese, softened
1/4 teaspoon garlic powder
8 flour tortillas (6-inch)
1 cup red bell pepper, finely chopped
1 cup low-fat shredded cheese
2 cups fresh spinach leaves (or 9 ounces frozen spinach, thawed and squeezed dry)
Directions
Wash your hands thoroughly with soap and water before beginning. Prepare your ingredients by chopping the red bell pepper into small, even pieces. If using frozen spinach, thaw it completely and squeeze out excess moisture with a clean kitchen towel or paper towels.
In a small bowl, combine the softened fat-free cream cheese and garlic powder. Mix until well blended and the garlic powder is evenly distributed throughout the cream cheese.
Lay out all 8 tortillas on a clean work surface. Spread approximately 2 tablespoons of the garlic cream cheese mixture onto the entire surface of each tortilla, leaving a small border at the edges.
On one half of each tortilla, sprinkle about 2 tablespoons of the chopped red bell pepper, followed by about 2 tablespoons of the low-fat shredded cheese. This creates a filling on just one side of each tortilla.
Top the cheese and pepper layer with fresh spinach: if using fresh leaves, add about 1/4 cup per tortilla; if using thawed frozen spinach, add about 2 tablespoons per tortilla. Distribute the spinach evenly over the other fillings.
Fold each tortilla in half, pressing gently to ensure the fillings stay contained. The folded quesadilla should have a half-moon or semicircle shape.
Heat a large skillet over medium heat until it is hot but not smoking, approximately 1-2 minutes. You can test the temperature by sprinkling a few drops of water on the surface—they should sizzle gently.
Place 2 folded quesadillas into the hot skillet. Cook for 1 to 2 minutes on each side until the tortilla turns golden brown and the cheese inside begins to soften. Use a spatula to gently turn them halfway through cooking.
Transfer the cooked quesadillas to a serving platter and cover loosely with aluminum foil to keep them warm while you cook the remaining quesadillas in batches of 2.
Once all quesadillas are cooked and on the platter, remove the foil. Using a sharp knife, cut each quesadilla diagonally into 4 wedge-shaped pieces.
Serve the quesadilla wedges warm on plates. They are best enjoyed immediately while still warm and the cheese is melted.
