Irish Boxty Potatoes

A traditional Irish potato pancake made with mashed and grated potatoes, bound together with butter and cream. These tender, golden pancakes are crispy on the outside and creamy within, perfect served warm with savory accompaniments. Ingredients
2 pounds russet, Yukon gold, or long white potatoes, peeled
Coarse salt and freshly ground black pepper to taste
1 cup milk or cream
4 tablespoons unsalted butter
Directions
Cut the peeled potatoes into large chunks and place in a pot of cold water. Bring to a boil and cook until tender, about 12–15 minutes. Drain well and transfer to a bowl.
Mash the hot potatoes with a potato ricer or masher until smooth. Season generously with coarse salt and freshly ground black pepper.
Gently fold the milk or cream into the mashed potatoes until well combined, stirring until no lumps remain. The mixture should be thick yet creamy.
Allow the potato mixture to cool to room temperature, about 10 minutes, then divide into 6 equal portions.
Heat 2 tablespoons of the butter in a large skillet over medium heat. Once melted and foaming, gently flatten each potato portion into the skillet using the back of a spoon, forming a pancake about ½ inch thick.
Cook the boxty pancakes for 4–5 minutes on the first side until golden brown and crispy. Carefully flip and cook the other side for another 4–5 minutes until golden and set.
Transfer the cooked pancakes to a warm plate. Add the remaining 2 tablespoons of butter to the skillet and repeat with any remaining potato portions until all are cooked.
Serve the boxty pancakes warm, seasoned with additional salt and pepper as desired.
