Ingredients

3 (3-inch) cinnamon sticks

5 cloves

4 cardamom pods, lightly cracked

1/4 teaspoon whole coriander seeds

1/2 star anise pod

1 quart (900ml) apple cider

1 tablespoon brandy (optional)

Raw sugar to taste (optional)

Lemon zest (optional)

Additional brandy for serving (optional)

Lemon slices for serving (optional)

Freshly grated nutmeg for serving (optional)

Directions

  1. Combine the cinnamon sticks, cloves, cracked cardamom pods, coriander seeds, and star anise in a small bowl or piece of cheesecloth. If using cheesecloth, tie it securely to create an infuser pouch.

  2. Pour the apple cider into a large saucepan or pot. Add the spice bundle directly to the cider or hang it inside the pot if using cheesecloth.

  3. Place the pot over medium heat and slowly bring the cider to a gentle simmer. Do not allow it to boil vigorously, as this will diminish the delicate spice flavors.

  4. Once simmering, reduce the heat to low and maintain a gentle simmer for 30 minutes to 2 hours, depending on desired intensity. The longer it simmers, the more pronounced the spice flavors will be.

  5. If using optional brandy and lemon zest, add them to the pot during the final 5 minutes of simmering and stir well to combine.

  6. If desired, add a touch of raw sugar to balance the spices and acidity, stirring until dissolved.

  7. Remove the spice bundle from the cider using a slotted spoon or by carefully pouring through a fine-mesh strainer into a serving pitcher or mugs.

  8. Serve the mulled cider hot in mugs. Top with a lemon slice, a splash of brandy, or a sprinkle of freshly grated nutmeg if desired.
