Honey Mustard Curry Chicken

Ingredients
4 chicken breasts, boneless and skinless or bone-in with skin
1/3 cup honey
3 tablespoons Dijon or grainy mustard
2 tablespoons curry powder
Directions
In a small bowl, whisk together the honey, mustard, and curry powder until well combined and smooth.
Pat the chicken breasts dry with paper towels. If using bone-in skin-on breasts, score the skin lightly in a crosshatch pattern to help the glaze adhere.
Heat a large skillet over medium-high heat. Once hot, place the chicken breasts in the pan and cook without moving them for 5–6 minutes until the bottoms are golden brown.
Flip the chicken breasts and cook for another 3–4 minutes on the second side.
Pour or brush the honey-mustard-curry glaze evenly over all the chicken pieces, coating both sides.
Reduce heat to medium and continue cooking for 5–8 minutes longer, turning the chicken once or twice and spooning the glaze over it, until the chicken reaches an internal temperature of 165°F when measured with a meat thermometer inserted into the thickest part without touching bone.
Transfer the cooked chicken to a serving platter and drizzle any remaining pan sauce over the top. Let rest for 2–3 minutes before serving.
