Ingredients
2 cups low-sodium chicken stock
1/4 cup almond butter
1/4 cup sun-dried tomatoes, chopped
2 fresh basil leaves, chopped
1/4 teaspoon white pepper
1/8 teaspoon cayenne pepper
3/8 teaspoon kosher salt
Freshly ground black pepper to taste
1 tablespoon sliced almonds, for garnish (optional)
Directions
Pour the chicken stock into a small saucepan and bring to a gentle simmer over medium heat.
Whisk in the almond butter until fully combined and smooth, breaking up any lumps.
Add the chopped sun-dried tomatoes, white pepper, cayenne pepper, and kosher salt. Stir well and simmer for 2-3 minutes until the flavors meld.
Taste and adjust seasoning with additional black pepper as desired.
Pour the soup into a bowl and top with fresh chopped basil and sliced almonds if using. Serve immediately.
