Ingredients
1 tablespoon vegetable oil
1 red chilli, thinly sliced (optional)
1 garlic clove, thinly sliced
500 grams mixed vegetables (such as bok choy, baby corn, and broccoli)
1½ tablespoons soy sauce
2 tablespoons sweet chilli sauce
Directions
Place a large wok or frying pan over medium-high heat and add the vegetable oil. Once the oil is hot and shimmering, add the sliced red chilli (if using) and garlic slices. Stir-fry for about 1 minute until fragrant and lightly softened, being careful not to let the garlic burn.
Add all the mixed vegetables to the pan, tossing everything together well to ensure they are coated evenly with the hot oil. Stir-fry over medium-high heat for 2 to 3 minutes, stirring frequently, until the vegetables begin to soften.
Pour in the soy sauce and sweet chilli sauce, mixing everything together thoroughly so the sauce coats all the vegetables. Continue cooking for 2 to 3 minutes more, stirring gently, until the vegetables are tender but still retain a slight crispness. Transfer to a serving dish and serve immediately.
Comments
This stir-fry delivers honest speed and genuine availability: all ingredients turn up at Harris Teeter, Food Lion, Walmart, or ALDI without a second stop, and the cost lands under $2 per serving with bulk mixed vegetables keeping the bill low. The stated 10 minutes is real if you buy pre-cut vegetables or grab a frozen blend, though prep from whole vegetables adds another 5 to 7 minutes. It reheats adequately but loses its snap, so plan to eat same-night; the dish feeds four well as a side or light meal but works best as part of a broader plate rather than standing alone.
