Ingredients

2 tsp vegetable oil

8 pork sausages

2 red onions, cut into wedges

1 garlic clove, crushed

2 tbsp Moroccan spice mix or ras el hanout

100 g soft pitted dates, roughly chopped

400 g canned chopped tomatoes

175 ml hot beef stock

1 tbsp cornflour

mashed potato, for serving

Directions

  1. Heat the vegetable oil in a large saucepan or flameproof casserole dish over medium-high heat. Add the pork sausages and red onion wedges, browning them for approximately 10 minutes until golden on all sides.

  2. Stir in the crushed garlic and Moroccan spice mix along with 75 ml water. Cook for 2 minutes, stirring frequently, until the spices become fragrant and the water prevents them from burning.

  3. Add the chopped dates and canned chopped tomatoes to the pan, mixing well to combine all ingredients evenly.

  4. Stir in the hot beef stock and bring the mixture to a gentle simmer. Continue cooking uncovered for about 5 minutes until the stew is heated through and thickened slightly.

  5. In a small bowl, mix the cornflour with 2 tbsp of water or additional stock to create a smooth slurry. Pour this into the simmering stew and stir well.

  6. Bring the stew to a boil and simmer for an additional 5 minutes, stirring occasionally, until the sauce thickens to your desired consistency and the stew is piping hot.

  7. Serve the Moroccan sausage stew hot over creamy mashed potato.
