Crispy roasted chicken wings glazed with a vibrant mango chutney and bright lime zest, finished with fresh red chilli and cilantro for a tropical, tangy flavor. Perfect as a main course with an exciting Asian-inspired twist.

Ingredients

1000 g chicken wings

neutral oil, for drizzling

salt and black pepper, to taste

200 g mango chutney

1 whole lime zest

1 whole red chilli, thinly sliced

fresh coriander (cilantro) leaves, roughly chopped

Directions

  1. Preheat your oven to 180°C (160°C fan/gas mark 4). Pat the chicken wings dry with paper towels.

  2. Arrange the wings on a large baking tray. Lightly drizzle with oil and season generously with salt and black pepper, tossing to coat evenly.

  3. Roast for 30 minutes until the wings begin to brown and release their juices.

  4. While the wings cook, combine the mango chutney with the lime zest in a small bowl, stirring until well blended.

  5. Remove the tray from the oven. Using a pastry brush, generously coat all the wings with the mango-lime mixture.

  6. Return to the oven for 20 minutes. Halfway through this time, turn the wings and brush again with any remaining glaze to ensure even coating and caramelization.

  7. The wings are done when the glaze is sticky and caramelized, and the internal temperature reaches 165°F (74°C).

  8. Transfer to a serving platter and immediately scatter the sliced red chilli and chopped cilantro over the top. Serve hot.
