Ingredients

1.5 oz. rice vermicelli noodles

1 lb. medium king prawns, peeled and deveined

0.5 cup loosely packed fresh mint leaves

2 tsp. brown sugar

2 tbsp. lime juice

2 tbsp. water

0.5 tsp. salt

1 tbsp. salt for noodle water

Directions

  1. In a medium pot over medium heat, combine 2 tablespoons water, brown sugar, lime juice, and 0.5 teaspoon salt. Whisk frequently until the sugar dissolves, about 2 minutes.

  2. Add the prawns to the pot and bring to a simmer. Cook, stirring constantly, until the prawns turn pink and curl, approximately 2 to 3 minutes. This ensures they reach a safe internal temperature of 145°F. Transfer the cooked prawns to a small bowl.

  3. Wipe out the pot and fill it halfway with water. Season with 1 tablespoon salt and bring to a boil.

  4. Add the rice vermicelli noodles to the boiling water and stir occasionally until tender. Check for doneness 2 minutes earlier than the package directions indicate. Drain the noodles and rinse under cold running water until cooled.

  5. Transfer the cooled noodles to a serving bowl and toss gently to combine and separate any clumped noodles.

  6. Arrange the cooked prawns on top of the noodles and garnish generously with the fresh mint leaves.
