Ingredients
¾ cup strongly brewed coffee
¾ cup unsweetened vanilla almond milk
3 tbsp pumpkin puree
1½ tbsp light brown sugar
1 tsp pumpkin pie spice
1 tsp vanilla extract
Directions
Brew ¾ cup of strong coffee using your preferred brewing method and set aside.
Pour the unsweetened vanilla almond milk into a small saucepan along with the pumpkin puree, brown sugar, pumpkin pie spice, and vanilla extract.
Place the saucepan over medium heat and stir frequently until the mixture is hot and steaming, about 4-5 minutes. Do not allow the mixture to boil.
Pour the hot pumpkin-spiced almond milk mixture into a mug containing the brewed coffee and stir well to combine.
Serve immediately. If desired, top with dairy-free whipped cream and a sprinkle of cinnamon or nutmeg.
Comments
This drink costs under $2 per serving when made at home, beating any coffee-shop tab, and every ingredient—including canned pumpkin puree and pumpkin pie spice—is stocked year-round at Harris Teeter, Food Lion, Kroger, and Walmart. The stated 10 minutes is honest; this is truly a weeknight winner with zero prep fussiness. The only caveat is that pumpkin puree is seasonal in spirit (September through November is prime), so outside that window you're drinking it against the grain, though the canned product means you can make it any month if you choose.
