2 cups fresh blackberries
1 cup granulated sugar
2 tablespoons white balsamic vinegar
2 oz rum, light or dark (optional)
sparkling lemonade, chilled
ice cubes
Directions
Combine the blackberries and granulated sugar in a medium bowl. Using a sturdy spoon, muddler, or potato masher, press and crush the berries thoroughly until the sugar dissolves and a thick, jammy syrup forms, releasing all the fruit juices. This will take 3–5 minutes of steady mashing.
Stir the white balsamic vinegar into the blackberry mixture, blending well to incorporate the tart, acidic notes. The vinegar balances the sweetness and creates the characteristic shrub flavor. Allow the mixture to rest at room temperature for at least 1–2 hours so the flavors meld and develop fully, or refrigerate overnight for deeper complexity.
Pour approximately 1 ounce of the blackberry shrub syrup into a tall glass. Add the rum (if using) and stir gently to combine. For a kid-friendly version, omit the rum entirely.
Add a handful of ice cubes to the glass, then top with chilled sparkling lemonade until the glass is nearly full. Stir gently to combine all ingredients.
Serve immediately and enjoy. Garnish with fresh blackberries or a lemon slice if desired.
