Ingredients

1 stalk celery, chopped

1 carrot, chopped

1 onion, chopped

5½ cups low-sodium chicken broth

1 cup cooked chicken, cubed

1 cup frozen peas

½ cup uncooked rice

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning. Prepare all ingredients by washing and chopping the celery, carrot, and onion into bite-sized pieces.

  2. Pour the low-sodium chicken broth into a large pot and bring it to a boil over medium-high heat.

  3. Once boiling, add the chopped celery, carrot, and onion. Reduce heat to medium and simmer for 5 minutes to soften the vegetables.

  4. Add the uncooked rice to the pot and stir well. Continue simmering for 12-15 minutes, stirring occasionally, until the rice is nearly tender.

  5. Stir in the cooked chicken cubes and frozen peas. Simmer for another 3-5 minutes until the rice is fully cooked and tender and the peas are heated through.

  6. Taste the soup and adjust seasoning as desired with salt and pepper. Serve hot in bowls.
