Potato Chip Shrimp Rolls

Ingredients
1.5 lb. shrimp, peeled and deveined
0.333 cup mayonnaise
2 tablespoons fresh dill, chopped
0.5 teaspoon Old Bay seasoning
2 tablespoons butter, melted
1 cup crushed potato chips
Directions
Pat the shrimp dry with paper towels. Cut each shrimp into quarters to create bite-sized pieces.
In a medium bowl, combine the mayonnaise, chopped dill, and Old Bay seasoning. Add the shrimp pieces and fold gently until evenly coated.
Pour the melted butter into a shallow dish. Place the crushed potato chips in another shallow dish.
Using a cookie scoop or spoon, form the shrimp mixture into 12 to 14 balls, each about 1.5 inches in diameter.
Dip each ball into the melted butter to coat lightly, then roll in the crushed potato chips until fully covered. Place on a parchment-lined baking sheet.
Preheat the oven to 400°F. Bake the rolls for 20 to 25 minutes, until the coating is golden brown and crisp.
Remove from the oven and let cool for 2 minutes. Serve warm and enjoy.
