Ingredients
4 large eggs
1/2 cup chopped fresh baby spinach
1/2 cup diced fresh tomatoes
Salt and black pepper to taste
12 ounces cooked beef (steak, roast, or deli roast beef), thinly sliced
4 slices reduced-fat Swiss cheese
4 whole wheat round thin sandwich breads, split and toasted

Directions
Crack the eggs into a medium bowl and beat them well. Add the chopped spinach and diced tomatoes, stirring to combine evenly.
Spray a large nonstick skillet with cooking spray and heat it over medium-high heat until hot. Pour in the egg mixture and cook for 2 to 4 minutes, stirring occasionally, until the eggs are almost set but still slightly moist.
Season the eggs with salt and black pepper to taste. Divide the egg mixture into four equal portions in the pan, keeping them separate.
Top each egg portion with one slice of Swiss cheese and divide the sliced beef evenly among the four portions. Remove the skillet from heat and cover it. Let the sandwiches sit for 1 to 2 minutes until the cheese is completely melted.
Place one cooked egg portion on the bottom half of each toasted bread slice. Close the sandwiches with the top halves and serve immediately while warm.
