Ingredients

1 lb roast or sandwich steak, sliced thin

1 tablespoon vegetable oil

Salt and pepper to taste

1 medium onion, sliced thin

½ green bell pepper, sliced thin

1 small jar sliced mushrooms (about 8 oz)

2 jalapenos, seeded and sliced thin (optional)

8 oz mozzarella cheese, shredded or sliced

6 slices provolone cheese (optional)

1 egg, beaten (for egg wash)

1 loaf pizza dough or store-bought stromboli dough

Directions

  1. Preheat your oven to 400°F (200°C).

  2. Heat a large skillet over medium-high heat and add the vegetable oil.

  3. Add the thin-sliced steak to the hot skillet and season generously with salt and pepper. Cook for 2-3 minutes until the meat is lightly browned, stirring occasionally. Do not fully cook the steak as it will continue cooking in the oven.

  4. Add the sliced onion, green bell pepper, mushrooms, and jalapenos (if using) to the skillet with the steak. Sauté everything together for 2-3 minutes, stirring frequently, until the onions are lightly softened and beginning to brown. Remove from heat and set aside to cool slightly.

  5. On a lightly floured surface, roll out the pizza dough into a rectangle approximately 9 by 13 inches.

  6. Transfer the dough to a greased baking sheet or aluminum foil. Spread the steak and vegetable mixture down the center of the dough, leaving about ½ inch of plain dough around all edges so the seams will seal properly.

  7. Layer the mozzarella cheese and provolone cheese (if using) evenly over the steak mixture.

  8. Fold the long sides of the dough over the filling first, then fold in the short ends and roll the dough tightly, sealing all seams. Place the stromboli seam-side down on the baking sheet.

  9. Brush the entire exterior of the stromboli with the beaten egg wash. Using a sharp knife, cut 2-inch-long slits across the top of the dough to create steam vents.

  10. Bake for 15-20 minutes until the exterior is golden brown and the cheese is melted.

  11. Remove from the oven and let cool for 2-3 minutes. Slice into 6 portions and serve immediately with your preferred dipping sauce such as ranch dressing or marinara sauce.

A straightforward weeknight winner with ingredients that live at every major Charlotte grocery chain—beef, onion, bell pepper, mushrooms, and both mozzarella and provolone are standard stock at Harris Teeter, Food Lion, Walmart, ALDI, and Kroger. The 35-minute stated time glosses over the prep of slicing and sautéing vegetables, plus egg wash and baking; budget closer to 50 minutes start to finish, which is still reasonable for a 6-serving crowd pleaser. At roughly $2 to $2.50 per serving, the cost is driven by the dual cheeses and beef, but that keeps the strip hearty and satisfying. It reheats decently in a 325-degree oven, making it solid for next-day lunch boxes, and there's no fussy technique—roll, stuff, brush, bake.
