Ingredients
1/2 cup margarine
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup all-purpose flour
3 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/4 cups rolled oats
1/2 cup semisweet chocolate chips
Directions
Preheat your oven to 350°F (175°C). Lightly grease your cookie sheets with margarine or cooking spray.
In a small bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and ground cinnamon. Set this dry mixture aside.
In a large bowl, cream together the margarine, brown sugar, and white sugar until light and fluffy, about 2 minutes.
Add the egg and vanilla extract to the sugar mixture and beat until well combined.
Using a wooden spoon or rubber spatula, fold in the dry ingredient mixture until just combined. Do not overmix.
Stir in the rolled oats and chocolate chips until evenly distributed throughout the dough.
Drop the dough by rounded tablespoonfuls onto the prepared cookie sheets, spacing them about 2 inches apart.
Bake for 10-12 minutes, until the edges are set but the centers are still slightly soft. The cookies will continue to firm up as they cool.
Remove from the oven and allow cookies to cool on the baking sheet for 2 minutes, then transfer to a wire rack to cool completely.
