Ingredients
2 tablespoons Vegetable oil
1 Very ripe small tomato, finely chopped
¼ Onion, finely chopped
1 Garlic clove, crushed
200 grams Green beans, trimmed
Salt to taste
Directions
Heat the vegetable oil in a small pan over medium heat until shimmering.
Add the chopped tomato and onion with a pinch of salt. Stir frequently and allow to soften for about 5 minutes, until the vegetables become tender and fragrant.
Stir in the crushed garlic and cook for another 30 seconds, allowing the aroma to develop.
Add the trimmed green beans and stir well to coat with the oil and aromatics. Cover the pan with a lid.
Cook covered, stirring occasionally, for about 10 minutes until the beans are tender but still maintain some firmness.
Taste and adjust the salt as needed. Serve warm.
