Ingredients

2½ pounds Boneless skinless chicken breast

¼ teaspoon Salt

⅛ teaspoon Black pepper

20 ounces Crushed or chunk canned pineapple

2 fluid ounces Water

Directions

  1. Wash your hands thoroughly with soap and water before beginning food preparation.

  2. Coat the bottom of a large frying pan with nonstick cooking spray. Set the burner to low heat and allow the pan to warm up for about 1 minute.

  3. Place the chicken breasts in the preheated pan in a single layer.

  4. Sprinkle the salt and black pepper evenly over the chicken breasts.

  5. Cook the chicken uncovered over low heat for about 8–10 minutes until the bottom edges begin to brown slightly.

  6. Pour the canned pineapple with its juice and the water over the chicken.

  7. Cover the pan with a lid and reduce heat to low. Simmer gently for about 10–12 minutes more until the chicken is tender and cooked through. The internal temperature of the thickest part of the chicken should reach 165°F (74°C).

  8. Serve the pineapple chicken and sauce over hot cooked rice, if desired.
