7-8 medium Idaho baking potatoes
2 egg whites
1 tablespoon chili powder
½ teaspoon cayenne pepper
1½ teaspoons smoked sweet paprika
1 tablespoon seasoning salt
coarse sea salt to taste

2 ounces light cream cheese
1 tablespoon milk
1 teaspoon minced fresh garlic
1 ounce shredded sharp white cheese
Directions
Preheat your oven to 430°F. Rinse the potatoes under cold running water and pat them completely dry with a clean kitchen towel.
Cut each potato into french-fry-sized strips, approximately ¾ inch wide. Place all cut fries into a large mixing bowl.
Pour the egg whites over the fries in the bowl. Add the chili powder, cayenne pepper, smoked paprika, seasoning salt, and oil. Toss everything together until all the fries are evenly coated with the egg white mixture and seasonings.
Line two large baking sheets with parchment paper. Carefully scoop the coated fries from the bowl onto the parchment, leaving behind any excess egg white liquid that may pool at the bottom. Distribute the fries in a single layer on each sheet.
Bake for 10 minutes. Remove the baking sheets from the oven and carefully peel away the parchment paper. The fries should slide easily onto the bare baking sheet. Return to the oven.
Bake for 5-8 minutes, then remove and carefully stir the fries while trying to maintain their shape. Return to the oven. Repeat this bake-and-stir cycle every 5-8 minutes until the fries develop a golden brown, puffy, and dry exterior while remaining tender inside. Total baking time should be 25-35 minutes. While the fries are baking, prepare the cheese sauce. Place the cream cheese in a microwave-safe bowl and microwave for about 30 seconds until softened. Whisk in the milk, minced garlic, seasoning salt, and oil until the mixture is smooth.
Add the shredded cheese to the mixture and microwave for another 20-30 seconds. Whisk until completely smooth. If the sauce is too thick, add a little more milk, one teaspoon at a time, until you reach your desired consistency.
Remove the fries from the oven. Taste and adjust seasoning with additional coarse sea salt if desired. Transfer the fries to a serving plate and drizzle or dip with the warm garlic cheese sauce. Serve immediately.
