Ingredients
1 teaspoon olive oil
1 cup onion, finely chopped
1 cup frozen green peas
1/2 teaspoon ground sage
1 1/3 cups water
1 cup couscous
1/2 teaspoon salt, or to taste
Directions
Wash your hands thoroughly with soap and warm water before beginning.
Heat the olive oil in a heavy skillet or saucepan over medium heat.
Add the chopped onion to the hot oil and sauté for 5 to 10 minutes, stirring occasionally, until the onion is soft and lightly golden brown.
Stir in the frozen green peas, ground sage, water, couscous, and salt.
Bring the mixture to a boil, then reduce heat to medium, cover with a lid, and simmer for about 5 minutes until all the water is absorbed and the peas are tender with a bright green color.
Remove from heat and fluff the couscous gently with a fork to separate the grains. Serve warm.
