5 heads of endive, separated into individual leaves
1 log creamy goat cheese, softened to room temperature
2 to 3 Golden Delicious apples, cored and minced finely
1 bunch fresh chives, minced
1.5 tablespoons paprika
Directions
Gently separate the endive heads into individual leaves by loosening them from the base. Rinse the leaves under cool water and pat dry thoroughly with paper towels to remove any moisture. Set aside on a clean work surface.
Rinse the apples, core them, and finely mince the flesh into small, uniform pieces. Place the minced apples in a small bowl and set aside. If not using immediately, toss lightly with a small squeeze of lemon juice to prevent browning.
Remove the goat cheese log from refrigeration and allow it to soften at room temperature for 5 minutes so it becomes easier to blend and spreads smoothly.
Rinse the fresh chives and use a sharp knife to mince them finely into small, even pieces.
In a medium mixing bowl, combine the softened goat cheese with the minced apples and minced chives. Fold gently until all ingredients are evenly distributed and the mixture is well combined but still maintains a slightly chunky texture.
Lay out the endive leaves on a serving platter. Generously spoon or pipe the goat cheese and apple mixture into each leaf, filling it from base to tip.
Sprinkle the paprika evenly over all the filled endive boats for a warm color and subtle spice. Serve immediately at room temperature, allowing guests to enjoy the fresh, delicate flavors of the dish.
