Ingredients
2 cups homemade brownie mix
2 tablespoons all-purpose flour
½ teaspoon baking soda
½ cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
¾ cup chocolate chips, optional
½ cup nuts, optional
Directions
In a large mixing bowl, combine the homemade brownie mix with the flour and baking soda. Whisk together until well blended and no lumps remain.
Pour the melted butter into the dry mixture, then crack in the egg and add the vanilla extract.
Using a hand mixer on medium speed, beat the mixture until smooth and fully combined, about 1-2 minutes.
If desired, fold in the chocolate chips and nuts using a spatula or wooden spoon until evenly distributed throughout the dough.
Using a cookie scoop or spoon, portion out 2-tablespoon-sized balls of dough onto parchment paper or silicone mat-lined baking sheets, spacing them about 2 inches apart.
Place the prepared cookie sheets in the refrigerator and chill for 1 hour.
Preheat your oven to 350°F.
Bake the chilled cookies for 8-10 minutes. The cookies are done when the glossy sheen on the surface just disappears. For slightly underbaked, fudgier cookies, bake for 8 minutes; for a more set texture, bake for 9-10 minutes. Do not overbake.
Remove from the oven and let the cookies cool on the baking sheet for 2-3 minutes before transferring to a wire rack to cool completely.
Comments
This is a low-friction weeknight dessert that pulls together in about 50 minutes of actual work—the stated 75 minutes overstates hands-on time by not separating bake time. Brownie mix, flour, baking soda, butter, eggs, vanilla, chocolate chips, and nuts are all shelf-stable staples at any Charlotte grocer (Harris Teeter, Walmart, ALDI, Kroger, Food Lion); no special stops needed. A box of brownie mix runs $0.75 to $1.50, and nuts are the only variable cost—figure $8 to $10 total for 24 cookies, or about 35 to 40 cents a serving, making this genuinely cheap. The cookies hold well for three days and don't require constant attention once in the oven, though they're best eaten fresh and don't really freeze well without texture loss.
